Honey Cornflakes

"Biskut Cornflakes Madu" or English-translated is Honey Cornflakes biscuit is one of the famous biscuits that is served during "Raya" or Eid Mubarak in Malaysia. Raya in Malaysia is definitely a festival that everyone has been waiting for, doesn't matter your skin color and religious beliefs; everyone is eager and eyeing for Raya to come. The food, the angpow (money gift) and of course the festive atmosphere of Raya have been synonymous with all 24 million Malaysians. All sort of dishes are served during Raya, you name it and you will have it. It's definitely a true culinary hospitality for every tourists that visits Malaysia during this period. It's also a perfect time for foreigners to experience the warmth welcome by Malaysians into their home and dine with culturally rich designated food.

Back to the biscuit, it is one of my favourite. It's easy to make and definitely easy for tummy as well. Quickly made and quickly finished, that's why my mum always prepared this 2 or 3 days before Raya. If she didn't, I can magically make them disappear with my happy tummy weeks before Raya. It's definitely a really sweet cookie, well no such desserts are healthy right?

So, to prepare this all you need are

1. 250gm cornflakes

2. 100gm butter

3. 4 spoonfuls of Manuka honey - I picked this because the taste is exquisitely delicious and addictive.

4. 5 tbs of granulated sugar

What you need to do:

1. Preheat the oven at 150 degrees Celcius.

2. Mix the butter, sugar and honey in a saucepan. Heat them at medium heat and keep on stirring the mixture. Avoid high heat since this can burn the sugar and you will get roasted and tangy honey mixture.

3. Then, pour the melted mixture into the cornflakes and mix them evenly until all of the cornflakes are coated with honey.

4. Using a tablespoon, divide the mixture equally into the patty liners and bake them for 10 mins (to get them getting crispy)

5. Once baked, store them in a cool place and store them securely and tightly from everyone so that you can keep them until Raya.
