Orange Almond Cake

I always find a combination of citrus fruit and nuts is a really intriguing thought thus this prompted me to make this. So easy to make and it's flourless. Rich with zesty flavour and nutty texture of almond, it's definitely a "kill" during tea time.



1. 2 navel oranges

2. 250g of almond meal

3. 250g of caster sugar

4. 5 eggs

6. 1tsp of baking powder

7. A cup of confectionary sugar for serving



1. Place 2 whole oranges in a saucepan and cover with water. Bring to the boil and simmer, covered, for 2 hour.

2. Drain and let them cool. Chop the oranges into quarters, discard any seeds, then place the chunks into a blender and puree until smooth.

3. Preheat oven to 170°C. Grease and line the base the cake pan.

4. Beat the eggs with sugar until thick. Then add the orange puree, almond meal and baking powder and mix them well.

5. Pour into the prepared pan and bake for 1 hour. Leave the cake to firm up in the pan for 20 minutes and then let it cool.

6. To serve, sift icing sugar on the cake and serve it with a cup of good, warm tea.
