Apple Turnovers

Serve: 4 people (I had them all by myself)

1. 2 Granny Smith Apples, peeled, cored and diced.

2. 1 tsp of orang zest (I used navel orange)

3. 1/2 cup of brown sugar

4. 25g of unsalted butter

5. 1 tsp of cinnamon powder

6. 1 tsp of vanilla essence.

7. 1 1/2 tbs of plain flour

8. (optional) 2 tbs of sugar (the sweetness is according to your preferences)

9. 2 puff pastry sheets (a little thawed)

10. Egg wash (one egg with a 1 tbs of water)

11. (optional) Granulated sugar for topping

1. Clean, peel, core and dice 2 Granny Smith Apples.

2. In a saucepan, add butter and melt it. Then add apples with orange zest, brown sugar, cinnamon powder and vanilla essence. Add sugar according to your preferences. Add more if you want it to be sweeter.

3. Let it cook for few minutes. Once the apples has softened a little bit, add flour and let it cook for a minute.

4. Cool the mixture completely.

5. Pre-heat oven at 200 C and thaw the pastry puff sheets.

6. Cut each sheet into 4 squares. Add a dollop of the apple mixture in the centre of each one. Brush the edges with the egg wash and seal it in a triangle shape. Make a few cuts in the middle of the pastry to let the hot air escape while it is baked in the oven.

7. Place each turnover on the prepared baking sheet and brush the tops with the egg wash. Sprinkle light with some granulated sugar and bake the turnovers for about 20-22 minutes or until golden brown.
